Chocolate Nut Butter and Banana Sandwich

Chocolate Nut Butter
  • ½ cup roasted walnuts
  • ½ cup roasted walnuts
  • ½ cup roasted almonds
  • ½ cup roasted hazelnuts
  • 1 tablespoon cacao powder
  • 1 tablespoon date paste


  • 4 slices whole grain bread
  • 1 banana
  • Chocolate nut butter
  1. To make the Nut Butter: If your nuts are raw, preheat oven to 350°F (176°C).
  2. Lay the nuts out on a single flat layer in an oven tray and roast for about 12-15 minutes until they become slightly golden. You may want to keep a close eye on it and taste one to see if it’s ready. Though while nuts are in the oven, they will not be very crunchy.
  3. Put all the roasted nuts in a food processor (don’t use blenders like Vitamix for this, as it won’t work as well – However, Ninja blenders will work). Turn it on and let it process. At first, the nuts will be powdery and flaky. Keep processing until it starts to release the oils and stick together. Process for another 2-3 minutes until the mixture is very wet and much like the consistency of a nut butter.
  4. Add the cacao powder and date paste (you’ll need to blend a bag of pitted dates until it forms a paste, if you blend whole dates, they may end up in chunks).
  5. Blend until the mixture is once again smooth and runny and spoon it into a jar.
  6. To make the Sandwich: Put two slices of whole grain bread in the toaster oven and toast both sides until it’s golden (don’t burn though).
  7. Peel the banana and chop half of it into coins.
  8. Once the bread is ready, spread a layer of nut butter on the each toasted bread, then fill the middle with banana coins, and then put them together. You may like to cut in the middle so you end up with smaller pieces.
